It’s getting warmer and this is an easy and delicious summertime, weeknight meal to make in 30 minutes!

Chicken Meatballs: 

1 lb ground chicken
1 small zucchini shredded
1/2 cup cooked couscous
2 Tablespoons tahini
3 cloves garlic, minced
Handful parsley, chopped
1 tsp cumin
1 tsp ground coriander
1/2 tsp cinnamon
Salt and Pepper

Directions:

Combine all ingredients and form 10 meatballs on a baking sheet.
Cook at 350 degrees until done, about 30 minutes.

Quinoa Tablouli:

1 cup quinoa (cook according to directions)
1/2 pound cherry tomatoes
3 scallions
1 cucumber, peeled
generous handful of parsley
juice of 3 lemons

Directions:

Pulse tomatoes, cucumbers, scallions and parsley in food processor.
Combine with quinoa, add lemon juice and chill for several hours.

Wrap it up

Serve the Chicken Meatballs with Romaine Leaves, Tabouli and Tzatziki (you can use store bought to save time, or make your own with yogurt, cucumber sliced thin, 1 garlic clove and lemon juice)
